Wedges, Wheels, and Peels

What to do and what you’re trying to achieve with cocktail garnishes.

Cocktail garnishes are the finishing touch of many drinks, think of them as a perfume, you want to notice the scent but you don’t want to be overwhelmed by it.

So, how do you know what citrus to use for each drink? We asked our bar team to show us the basics of cocktail garnishing.

The Flamed Coin

This garnish trick is not only a great way to impress your guests, but the flame adds a perfect amount of vibrant orange flavor with a slightly smokey undertone.

Begin by holding your orange disk in one hand, the lighter in the other, and warm the porous side with the flame.
Move the orange to the side of the flame.
Squeeze the coin to release the juices (this will cause a small flare-up from the juice, so be careful.) Drop coin into drink to serve.
