As head sommelier for Soigné Hospitality, Zachary Byers brings a clear compelling vision for our wine programs.

Byers’ perspective was forged through the challenge and creativity required to build exceptional wine lists in every type of dining room, where the true touchstone is the diner’s trust and experience. His programming hasn’t been defined by grape or region, but is led by the connection that’s built with the experience of genuine hospitality.

Byers joins Soigné from Denver’s celebrated fine dining scene, where he spent nearly a decade across recently Michelin-awarded restaurants. As Head Sommelier at The Wolf’s Tailor, and Wine Director at Beckon for three years from its inception in 2018, he honed his approach to building wine programs that balance deep knowledge with dedication to hospitality.

That insight has become foundational for building and unifying wine lists. His programs prioritize both discovery and craftsmanship, ensuring they “take care of everyone, no matter what” while removing the intimidation and pretension that can accompany fine wine. In his view, there is always an option that “will surprise you and knock your socks off,” and the wine lists at Soigné Hospitality create space for those memorable moments.
